Our Family's Pumpkin Pie Recipe

One of the best parts about the holiday season is getting to spend time with family and looking forward to the food we get to eat together. As each home begins their cooking preparations for their Thanksgiving meal later this week, we wanted to share our favorite family recipe with you. Marian Delano Brooker is the mother of our President, Mal Brooker, and this is her recipe for the best pumpkin pie. According to Marian, this is the best pie crust she has ever had and she has never seen a similar recipe. Her mother-in-law taught her how to make it and Marian has improved on it in her own way since. The pumpkin filling was the recipe on the can of Libby's pumpkin in the 60's. Libby's has changed the recipe a few times since then, but Marian always preferred the original one.

Brooker Pie Crust Recipe

Ingredients

2 cups of high gluten flour

1 cups of double zero (00) flour (or cake flour if you can’t find 00)

1 tbsp. of sugar

1 tsp. of sea salt

1 heaping cup of Crisco (about 1 ¼ cups)

1 cup of whole milk, cold

Method:

Mix all ingredients together with your fingers until the mixture is like cornmeal. Don’t press too hard, or the crust will be tough. Add “about” one cup of cold milk, putting in a little at a time until it forms a ball, not too dry and not too wet. Cut ball in half, makes two crusts. Halve all ingredients if you desire a one crust pie. To make a baked shell, bake in 450 degree oven for 12-15 minutes.

Pumpkin Pie Filling

Ingredients

1 15 oz. can of Libby’s pumpkin (note: NOT Libby’s Pumpkin Pie Mix)

2 slightly beaten eggs

½ cup of sugar

¼ cup of brown sugar

½ tsp. of sea salt

1 ½ tsp. of cinnamon

1 tsp. of ground ginger

¼ tsp. of ground cloves

¼ tsp. of freshly grated nutmeg, use a little more when freshly grated

1 ½ cups of evaporated milk

Method:

Preheat oven to 400 degrees. Mix everything together and pour into an unbaked pie shell. Bake for 20 minutes. Then reduce heat to 350 degrees and continue to bake for approximately 45 minutes longer.
